Rhonda Bell announced that Gypsum Creek Grill will be open at the town's golf course April 1.
Bell partnered with Tom Edwards, a Gypsum Town Council member, and his wife, Margaret, on the restaurant venture. Their partnership is Bell Edwards Company.
“We'll serve comfort food, more or less,” Edwards said in February. “It won't be anything too fancy. We'll keep it simple to get started.”
A liquor license application for the restaurant is already in the works.
Edwards has said before that he is more of a financial backer of the operation and Bell will be running it.
“Bell has great customer service skills and 17 years of restaurant experience,” he said.
Bell Edwards Company will also operate the food and beverage cart for the municipal golf course.
The previous restaurant at the location, Big Valley Steakhouse, called it quits there last October. Edwards estimated his company will be about the sixth restaurant to try the location.
