EAGLE, Colorado — With its sleek leather couches and book-lined shelves, the new Fusion Cafe in Eagle feels a bit like an upscale library.
It boasts a major advantage over a library, though: the crepes griddle.
Visitors to the cafe, which opened last week, will find a mix of savory and dessert crepes, plus a coffee menu.
The owners of Golden Oven pizza shop have expanded into a 950 square foot space they are leasing adjacent to the eatery.
Henny Kovacs, who has been running the pizza shop with business partner Simona Beltran for the past five years, said he was inspired to open the cafe after tasting a cup of Denver-based Novo coffee.
“I fell in love with it, and the space came available,” he said.
For Kovacs, the transition from pizza to crepes came easily — he simply swapped crust for light, flaky crepes and added many of the same toppings that flavor his pizzas.
The Fusion Crepe ($6.99) comes with mozzarella, avocado, basil and olive oil tucked inside a crepe and sprinkled with a festive topping of Roma tomatoes.
“I like Greek salad and that's with fresh Mozzarella and avocado,” Kovacs said. “I wanted to do something light.”
Eagle resident Katie Andrews, 12, shared a dessert crepe with three of her friends on a recent afternoon.
The girls said they picked a chocolate, banana, strawberry blend from the sweet crepes menu.
“It tastes homemade,” Andrews said.
She added that the atmosphere is cozy; the girls had settled into the pizza shop side of the eatery and were listening to a Phish song playing on a large TV. Along with crepes, the cafe sells Novo coffee and drinks such as lattes, espresso and cappuccino.
Edwards resident Karin Weber owns the cafe space and Fusion!, the imported furniture shop adjacent to it.
“We hope that Fusion Cafe will become a favorite meeting place where the community can gather to enjoy good food, coffee and conversation,” she said.
The building that houses Fusion! has been through several makeovers over the past 12 years. It has served as a motel, Cattails restaurant and Salsa's restaurant. Most recently the cafe area housed a gift shop.
